How can the random motions of "crowding agent" molecules lead to self assembly? That seems like a contradiction of the Second Law.

This may require more than two sentences. Thing about it, don't just "bang it out." How can a difference in concentration (in a fluid) lead to a pressure? In other words, can you briefly explain section 7.3? A candy bar for anyone who can do this really well.
